Dark color is not always real: organic balsamic vinegar without coloring ingredients
Especially in the warm summer months, many people prefer to eat light meals. Delicious salads, refined with fine vinegars, are ideal here. Aceto balsamic vinegar is particularly popular. However, there are clear differences in quality. Experts have some tips for consumers.
Popular dressing for delicious salads
Salad is popular as a side dish or as a main course. Most types of lettuce are tasty and healthy. The highlight of every salad is the dressing. Aceto balsamic vinegar is particularly popular. With caprese (tomatoes with mozzarella), the dark grape vinegar is a must, just like with other Mediterranean dishes. There are many products with the name on the market. They often differ significantly in their quality. Experts have some tips on what to look for.
Dark color is not always real
Aceto Balsamico is made from grape must or grape must concentrate and wine vinegar. "Dyes such as caramel or caramel are responsible for the characteristic deep brown color of many products," explains Silke Noll, nutrition expert at the Bavarian Consumer Center, in a message.
The name "Aceto Balsamico" is not legally protected. "Aceto Balsamico di Modena" must meet more precise requirements.
This carries the blue-yellow seal of the EU for a protected geographical indication. The producers undertake to use grapes from the Modena or Reggio Emilia regions.
An acidity of at least six percent and storage in wooden barrels for at least 60 days are also required. Filling can also take place in Germany.
Organic balsamic vinegar without coloring ingredients
Organic balsamic vinegar does not use coloring ingredients. Organic producers use intensively cooked, dark grape must and often let the vinegar ripen longer.
Therefore, its price is usually significantly higher than that of conventional products.
Of course there is also the possibility to make herbal oils and fruity vinegar for the salad yourself. It takes weeks for the salad dressings to be ready to eat, but then you always know exactly what they contain. (ad)
